These energy bites are something I keep on hand ALL THE TIME. They are a quick bite in the morning when I just need a little something till I have time to make breakfast or if I am running out the door and need a quick snack. These energy bites are very popular right now and you really can make them with anything. I created these because they incorporate a lot of super foods, which are also good for breast feeding and supporting a healthy milk supply.
There are a ton of lactation cookies, balls and bars out there, but I have yet to find one that is not LOADED with sugar. The two main foods that have been proven to help keep up milk supply are flax seeds and oats. Luckily these two things are really easy to incorporate into a lot of different meals and snacks.
These are super quick to make and you can just pop them in the freezer or fridge as no bake energy bites or bake them for 15 minutes than put them in the freezer to store. I notice that baking them first gives them a nice crunchy texture that you don’t get from not baking them.
I add in dark chocolate to these, but you can also add in a ton of your favorite foods as well. I have added in dried cranberries and pecans before so feel free to chop up any kind of fruit or nut and mix it in! If you are allergic to nuts, swap out the peanut butter with sun butter if that is something you are not allergic to.
Peanut Butter Chocolate Energy Bites
Time: 25 minutes Makes: 24 bites
1 1/2 to 2 large bananas
1/3 cup peanut butter
1 1/2 tbsp honey (or more if you want it sweeter)
1 tsp vanilla
1 1/2 cup of oats
2 tablespoons chia seeds
1/2 cup ground flaxseed
1/4 cup coconut flakes
1/4 tsp salt
1 tsp cinnamon (or more if you like)
1/3 cup dark chocolate chunks
Preheat oven to 350. Get out a big bowl and mash up your banana. Now add in your peanut butter, honey and vanilla and mash that all together. In a smaller bowl mix all of your dry ingredients together. Add the dry ingredients to the banana mixture and now add in the dark chocolate. I like to cut up the dark chocolate into smaller pieces, but that is up to you. Make sure everything is mixed well. Get out a cookie sheet and spray it with cooking spray. Using a tablespoon, spoon out 24 balls onto the cookie sheet.
Bake for 15 minutes. Once done, transfer the bites to a cooling rack. Once cooled I like to store these in the freezer in a freezer bag so they last longer and have a hardier texture to them, but feel free to store them in the fridge.
